He’s Got Crabs

One can never go wrong with a traditional tailgate ofribs, burgers, sausage, hoagies or wings. But if you are looking for something new to bring to the tailgate, try my favorite, BBQ Soft Shell Crabs.

You will definitely grab the eye of fellow tailgaters with this unique BBQ (you might also attract the occasional passing seagull).

Ingredients:

  • 10-12 soft-shell crabs (the bigger the better!)
  • Lemon juice (1 lemon)
  • 1/4 tsp. thyme
  • 1/4 tsp. tarragon
  • Fresh garlic (pressed), 3 cloves
  • 1 tsp. salt
  • 1 tsp. ground white pepper
  • 1 cup olive oil
  • 2 tbsp. vinegar

The night before the tailgate mix together the thyme, tarragon, garlic, salt, pepper, lemon juice, vinegar and olive oil. Put the sauce in the fridge.

Brush the sauce on both sides of the soft-shell crabs generously and arrange the crabs, back down, onto the grill and barbecue for 8 minutes.  Baste the crabs often with the sauce. Turn the crabs over and barbecue for another 8 minutes. Keep brushing the crabs with the sauce, until they are well done.

Enjoy immediately! The crabs go perfect with a Land Shark, Corona, Bud Lime, or Miller Chill beer. Even better with a claro cigar.
