Tailgating is all about good food, tossing back a few beers and enjoying the company of good friends. What if you could combine your beer and your meat to make a delicious marinade that is both easy and quick. Most of your prep work will need to be done the night before your tailgate party but if done right, you will be grilling up some pork that will be the envy of the entire tailgating parking lot.
What you’ll need:
3 pounds boneless pork loin
Marinade:
1 12 oz. can or bottle of your favorite beer
1/2 cup dark corn syrup
1/2 cup finely chopped onion
1/3 cup prepared mustard
1/4 cup cooking oil
1 tablespoon chili powder
2 cloves minced garlic
In a medium bowl, stir together remaining ingredients. Place pork in a zipper plastic bag and pour marinade over the pork. Make sure to get as much air out of the bag as possible to ensure the meat is immersed in the marinade. (An excellent tool to make your marinating bags air tight is the FoodSaver Pro Sport.)
Refrigerate pork and marinade over night to ensure maximum flavor. Once at your tailgate party location, remove pork from marinade and place on grill. Grill pork, covered, with banked charcoal or on gas grill basting frequently with leftover marinade. Remove from grill when meat thermometer reads 155 F. Let rest 10 minutes before slicing thinly to serve.
