I was flipping through a mountain sized book on BBQ last summer when I came upon a page about deserts. I saw a salivating looking treat that originated in Brazil and read into it. The recipe is quick, simple and the desert is truly delicious. What makes it taste so good is the fact that the pineapple is coated in sugar and cinnamon (which is then caramelized by the heat of the grill). Here is a quick tailgate desert recipe that is a winner.
1 cup sugar
1/4 cup Cinnamon
Slice the top and bottom off the pineapple and all of the skin so that only the fruit is showing.
Mix the cinnamon and sugar together in a cup.
Put a skewer down the middle of the pineapple’s core so you can rotate it over a grill.
Gently coat the entire pineapple with the mixture until evenly coated.
Rotate the skewer every few minutes on medium heat until the pineapple caramelizes and looks golden brown.
Remove the pineapple and slice off THIN slices from the pineapple.
Serve the slices and then repeat coating the pineapple, slicing and serving until only the core remains.
