Mom Can Tailgate

Some sons will go with flowers (despite the flowers being double or triple their normal price) or maybe a framed family picture. Others will surprise mom with a Mother’s Day brunch. This fan went with baseball tickets, a Chase Utley t-shirt jersey, and a morning tailgate with mom.
In the past my tailgates have been with friends or with my dad. Yesterday was a tailgating first for me…just mom and I. The weather was perfect and the afternoon was an all around good time. Mom even brought a surprise for the tailgate…
- 1 cup semi-sweet chocolate chips
- 1 cup powdered sugar
- 3 tablespoons light corn syrup
- 3/4 cup dark rum
- 2 /12 cups vanilla wafer crumbs
- 1 cup chopped walnuts
Directions
- Melt the chocolate on the stove, stirring until smooth
- Remove from heat and whisk in 1/2 cup of sugar, corn syrup, and then the rum
- In a separate bowl, mix the vanilla wafer crumbs and walnuts
- Add the chocolate mixture to the nut mixture and stir until well blended
- Place the remaining 1/2 cup of sugar in a bowl
- Roll the dough into 1 inch balls and then roll the balls in the sugar
- Cover and refrigerate
If you want to be on your best behavior while with mom I would suggest not having any more than 3-4 of these rum balls (especially after a few morning beers!).
